Bikini Recipe

Serves 10 guests

Ingredients for the Citrus Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

To make the Drink (makes 850ml, enough for 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Method

For the Syrup: Combine the listed components in a saucepan, bring to a simmer, agitating until the sugar dissolves. After that, remove from the burner allowing it to cool entirely. Pour into an sterilised bottle, cap it keeping it chilled, where it will keep for up to one month.

For the Premix: Mix every spirits and syrup into one sizeable container, leave to sit for an hour, then pass it through best through muslin, to ensure it's fully clarified.

When ready to serve: Add 85ml from the cocktail base into a cocktail shaker filled with ice, gently stirring carefully for one minute to cool it down. Strain into a frosted cocktail glass or a similar vessel, decorate with some cranberries and finish using a brief mist of the essential oil above the glass.
